Grandmom's Stuffing

Ingredients

  • 1 loaf bread We use Texas toast
  • 2 cups chopped celery
  • 1/2 cup chopped onion
  • 2 tbs parsley fresh or dried
  • 2 hard boiled eggs optional
  • 1 can mushrooms optional
  • 2 eggs
  • 1 stick butter
  • salt and pepper to taste
  • 1 pound mild Italian sausage
  • 1/2 cup chicken broth

Instructions

  • Toast and chop bread. Place in large bowl
  • Chopped the hard boiled eggs and mix with the bread
  • Place butter in large skillet, medium to high heat. Wait until melted. Add chopped celery, onion, mushrooms and sausage. Sautee until sausage is lightly browned. M
  • Add chicken broth and cook until reduced a bit
  • Pour sausage mixture into the bowl with bread and eggs. Mix and let cool 5-10 minutes
  • Add 2 eggs and mix
  • Place in a 9x13 baking dish
  • Bake at 375 degrees for 20-30 minutes covered. Remove cover and cook 25 minutes uncovered
