Grandmom’s Stuffing: A Thanksgiving Favorite

November. Fall. Thanksgiving. My favorite time of the year. Also, what used to be my Grandmother’s favorite holiday, even though it was Christmas when the family was all together. One of my favorite parts of Thanksgiving was my Grandmom’s stuffing.

Last year, A and I (well, mainly me) decided to host Friendsgiving for the first time. One thing I knew I wanted to make was Grandmom’s stuffing. The only problem was, I didn’t have the recipe. There was some family drama in the past the resulted in me not getting to keep my Grandmom’s recipe box. I knew what was in the recipe, but didn’t know the exact measurements or cooking time.

Going to my Dad, who is my only living family member on that side of the family, I hoped he would remember since he would help my Grandmom make it after my Grandpop died. Well, he remembered about as much as I did. A quick Google search found a similar recipe and while we were searching, my Mom went through her recipe books. Lo and behold, we had a copy of my Uncle’s version of my Grandmom’s version.

Friendsgiving was a success, as was my Grandmother’s stuffing! Everyone loved it, including those who admit they do not like stuffing. What makes this stuffing unique (at least for me) is that there is sausage, hard boiled egg and in the case of the version I make for my dad, mushrooms.

I also can’t even recall how many times I burnt myself as a kid while toasting the bread for this recipe. However, the memories of helping my Grandparents cook Thanksgiving dinner will last my lifetime.

Knowing that I can help keep my Grandmom’s love for Thanksgiving alive means a lot to me. In a way, it feels like my Grandmom is still here feeding everyone who walks into her house.

Grandmom’s Stuffing

Ingredients

  • 1 loaf bread We use Texas toast
  • 2 cups chopped celery
  • 1/2 cup chopped onion
  • 2 tbs parsley fresh or dried
  • 2 hard boiled eggs optional
  • 1 can mushrooms optional
  • 2 eggs
  • 1 stick butter
  • salt and pepper to taste
  • 1 pound mild Italian sausage
  • 1/2 cup chicken broth

Instructions

  • Toast and chop bread. Place in large bowl
  • Chopped the hard boiled eggs and mix with the bread
  • Place butter in large skillet, medium to high heat. Wait until melted. Add chopped celery, onion, mushrooms and sausage. Sautee until sausage is lightly browned. M
  • Add chicken broth and cook until reduced a bit
  • Pour sausage mixture into the bowl with bread and eggs. Mix and let cool 5-10 minutes
  • Add 2 eggs and mix
  • Place in a 9×13 baking dish
  • Bake at 375 degrees for 20-30 minutes covered. Remove cover and cook 25 minutes uncovered
